A simple baked dessert featuring sweet peaches and blueberries topped with a buttery oat crumble.

- 4 cups fresh or frozen blueberries
- 4 cups fresh or frozen peach slices
- 1/2 cup granulated sugar (for fruit)
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 3/4 cup packed brown sugar (for topping)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup cold unsalted butter, cubed
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the blueberries, peaches, 1/2 cup granulated sugar, cornstarch, and lemon juice. Mix gently.
- Pour the fruit mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the flour, rolled oats, brown sugar, cinnamon, and salt for the topping.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the fruit mixture.
- Bake for 40 to 45 minutes, or until the topping is golden brown and the fruit filling is bubbly.
- Let the crumble cool for at least 15 minutes before serving.
Notes
- If using frozen fruit, do not thaw before mixing. You may need to add 5-10 minutes to the baking time.
- Serve warm with vanilla ice cream or whipped cream.
