  • 4 cups fresh or frozen blueberries
  • 1 cup granulated sugar (divided)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 cup cold unsalted butter, cut into pieces
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a bowl, mix the blueberries, 1/2 cup of the sugar, cornstarch, and lemon juice. Pour this mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined to form a soft dough. Do not overmix.
  6. Drop spoonfuls of the dough over the blueberry mixture, leaving small gaps between the mounds.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool slightly before serving.

Notes

  • For frozen blueberries, do not thaw them before mixing with the sugar and cornstarch.
