A rich and creamy cheesecake infused with the flavor of Irish cream liqueur.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup Baileys Irish Cream
- 1/4 cup heavy cream
- Chocolate shavings, for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in melted butter and mix until combined. Press the mixture evenly into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes. Remove from oven and let cool.
- In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually mix in the Baileys Irish Cream and heavy cream until just combined. Do not overmix.
- Pour the filling over the prepared crust.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill the cheesecake in the refrigerator for at least 4 hours, or preferably overnight.
- Garnish with chocolate shavings before serving.
Notes
- For a smoother crust, you can pulse graham crackers in a food processor.
- Ensure your cream cheese is at room temperature for a lump-free filling.
- To prevent cracking, avoid overbaking and allow the cheesecake to cool gradually.
