- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
- 1/2 cup finely diced apple (peeled or unpeeled)
- 1/2 cup powdered sugar (for frosting)
- 1 tablespoon milk (for frosting)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in the applesauce until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Fold in the diced apple.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- For the frosting, whisk together the powdered sugar and milk until smooth. Drizzle or spread over the cooled cupcakes.
Notes
- Use a firm apple variety like Granny Smith or Honeycrisp for the best texture.
- You can add 1/4 teaspoon of nutmeg to the dry ingredients for extra spice.
