- 2 large eggs

- For the Frosting: 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, beat the granulated sugar, brown sugar, and oil until combined. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the grated apples and chopped walnuts, if using.
- Pour the batter into the prepared cake pan.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- To make the frosting, melt the butter in a small saucepan over medium heat. Stir in the brown sugar and milk. Bring the mixture to a boil and cook for 1 minute, stirring constantly. Remove from heat and let cool slightly.
- Stir in the vanilla extract and powdered sugar until smooth. If the frosting is too thick, add a little more milk, one teaspoon at a time. If it is too thin, add more powdered sugar.
- Once the cake is completely cool, spread the caramel frosting evenly over the top.

- Use firm, tart apples like Granny Smith for the best texture and flavor in the cake.
- You can toast the walnuts briefly before adding them for deeper flavor.
- If you prefer a thicker frosting, boil the caramel mixture for an extra minute.
