Simple recipe for gluten-free sugar cookies made with almond flour.

- 2 cups almond flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the almond flour, powdered sugar, and salt.
- In a separate bowl, cream the softened butter until smooth. Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Do not overmix.
- Roll the dough out between two sheets of parchment paper to about 1/4 inch thickness.
- Use cookie cutters to cut shapes from the dough. Place the cutouts on the prepared baking sheets.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- You can chill the dough for 30 minutes before rolling if it seems too soft.
- These cookies do not spread much, so you can place them close together on the baking sheet.
